Prepped this morning and I put the pork in the oven as I headed out for a lovely walk. A quick stop at @wolstonbury.co on the walk for wine to go with dinner. Perfect!
I’ve really been working on my roasts to minimise the washing up/dishwasher load. I think I’ve got it as organised as possible in terms of what happens when and what dishes, pans and sieves be used multiple times.
Parsnips and Leeks are in season at the moment so these were the stars of the show with the pork. The crackling was super cracklingly (not sure if I’ve just invented that word) 🤔 and the gravy full of flavour. I’d roasted the pork on apples, onion and carrots. Once the pork was cooked I removed the pork and poured off the juices from the pan into a glass. I allowed the fat to settle on the top. A chunk of ice helped speed up this process. The pan went direct on the hob with the apple and veg, reserved juices, 2 heaped tablespoons of flour and a good pour of red wine. I worked the meat juices off the bottom of the pan with a whisk and added water. When ready to serve I strained the gravy pushing on the apples and veg in the sieve, to squeeze every bit of flavour out.
All 5 family members are now happily in a food coma 🥰 I don’t always cook a roast on a Sunday but when I do, I really enjoy it. I think the 2018 Bacchus definitely helped the enjoyment today 🥂
